Hacienda Sonora – Mr. Diego Guardia
Hacienda Sonora is located at the foot of the Poás volcano. The farm runs on 100% renewable energy, generated by a hydroelectric generator that transforms the rush of the rivers into energy.
The energy powers the wet and dry mills and provides free electricity to everyone who lives and works on the farm, has shared its success generously, paying fair wages to all workers and supporting the local community economy.
Hacienda Sonora has its own micro-mill, which allows the farm to separate plots by variety and create unique micro-plots and covers approximately 100 hectares; of this, 45 hectares are dedicated to growing coffee, in shaded areas.
The coffee plants are surrounded by exotic trees and other native vegetation. This biodiversity promotes soil health and keeps the soil rich in nutrients that promote the growth of dense and delicious cherries.
After selective hand picking, the ripe cherries are laid out to dry on the farm’s raised beds or on the patio, where they are turned frequently to help dry evenly.
