COSTA RICA – TARRAZU’ – Tirra
Coopetarrazú, which Hacienda Cafetalera joined in 2013, cultivates an area of 99 hectares. Eighteen permanent and eight seasonal workers are employed in the 4 hectares dedicated to the production of the lots called “Tirra.” Production is located on mountainous terrain, between 1,400 and 1,550 meters above sea level and with a slope of up to 25 percent.
The process involved selectively picking cherries at the right stage of ripeness. Cherries stored whole with pulp are left to dry in the sun on patios and in suspension on African beds, for several consecutive days. During the day it is stirred continuously to ensure uniformity, and at night the coffee is covered.
